Healthy Apple Crumble Recipe! (Gluten Free, Vegan, Refined Sugar Free)

I had a huge craving for apple crumble for breakfast the other day. Not apple cinnamon oatmeal or anything, but a legitimate apple crumble. It could be that I was just procrastinating on studying for midterms, but the craving was real, so I began my hunt for a easy and quick apple crumble recipe - but every recipe I've come across always has tons of butter and sugar?

So in my frustration, I just decided to throw everything in a saucepan and see what happened, and who would've thought - I came up with a really great recipe! It's actually so satisfying and so easy to make, without having to resort to using loads of sugar and butter.

It only takes about 15 minutes to make and serves 1, so you can easily multiply this recipe depending on how much you want to make!


Ingredients:

3 medium sized apples (I used MacIntosh, but you can use whatever you have!), cut into small cubes
1 tbsp cinnamon
1/4 tsp nutmeg
1 tbsp maple syrup
1 tsp coconut sugar
Pinch of salt
2 tbsp water
1/4 cup gluten free granola

Directions:

1. Combine all ingredients into a small saucepan (except the granola!) and cook at medium-high heat until the desired softness of the apples. I like mine very soft, which took about 10 minutes.

Note: Once the apples are soft and cooked, you should have a some liquid at the bottom of the pan. If you don't, add a little more water.

2. Remove the apples from the pan, leaving only the liquid in the pan. Put the apples in a bowl.

3. Keep this liquid at a simmer, and add the granola

4. Cook the granola until all the liquid as been absorbed and the granola is a little crunchy

Note: it will be softer than that of a traditional apple crumble of course, because we are not using any butter! Cook it until it reaches a texture you like!

5. Scoop your granola mixture on top of your apples!

1 Year of Covid-19: A reflection

  It feels like just yesterday we were all feeling the anxiety and uncertainty of a new disease that was spreading quickly around the world that no one truly understood yet. We were facing the first wave of cases, the fear of going outside and being around people and the first round of quarantines and restrictions.  It feels like just yesterday, but also so long ago.  I, and I am sure many others, am feeling a mix of emotions.  Sad for the loss of comfort we once had. Grief for all the lives lost and permanently changed. Thankful for my health and that of my family. Gratitude for the scientists and frontline workers alike, working tirelessly behind the scenes I hope that one day we can return to a new normal.
